To-Do

Yesterday was very productive!

Workout

Wednesday mornings = BodyPump.  Class was great, although, I made a pretty poor decision by choosing the only spot in the whole room that did not have a mirror in front of me or to the side- I didn’t think it would be a big deal, but I soon realized that not being able to see your form in the mirror really makes it difficult to do the class! I won’t be setting up there again.

After class, I hopped on an elliptical for 20 minutes, while flipping through the Southern Living Weddings magazine I got in my Easter basket.

I’ve decided that the only way to have your wedding featured in any wedding magazine is by having it outside and using something vintage as your theme.

Breakfast

Breakfast was a fabulous smoothie, if I do say so myself.

Into the blender went:

-1/2 cup almond milk

-1/4 cup Chobani Lemon Greek yogurt

-1/3 cup frozen blueberries

-7 frozen strawberries

-1 scoop Chocolate Muscle Milk Protein Powder

-1 packet Truvia

-Handful of ice

I really like the addition of Lemon Chobani- it brings out the sweetness of the fruit!

*Note*: I discovered that whenever I insert bullet points into my posts, it messes up my font and spacing, like in this post. Is this happening to any other WP users?

Lunch

Lunch was simple.  I melted half a slice of swiss cheese onto a whole grain sandwich thin, and then added some sliced deli ham and Dijon mustard.  

On the side, I had a salad made with Romaine and a drizzle of Kraft Toasted Sesame Dressing.

After lunch, I had a few things to get done in order to begin crossing things off my daunting “To Do Before June 1st” list that is hanging on the fridge.  June 1st is the deadline for my nursing school application to be turned in.

The List

Not sure if that last one is gonna happen, but I keep my eyes peeled whenever I walk down sidewalks 🙂 .

First on the list: get my fingerprints done!

I went to the local police station and had my fingerprints taken and placed on a card.  Apparently, my fingers are so freakishly small that it’s hard to get good prints.

I’ll never forget when I got my engagement ring sized and the jeweler couldn’t believe that my ring size was a 3 1/2.  That’s like…circus midget size.

The prints were a success, but getting the ink off was another challenge.  Ew.

I needed to mail the print card to Tallahassee, and I also had some other forms to mail to the school, so I went to the post office.  My total was only $1.88, which was great until I saw one of these:

Lucky for me, the post office just happens to be located in the back of a big store that sells everything from artwork to homemade sauces and wine.  I decided to peruse the store to see if I could find something worthwhile to bump up my purchase total.  It didn’t take me long to find the food, and I walked out with a jar of Salsa Verde!

I decided to try out my purchase with some whole grain Tostito’s Scoops topped with a slice of melted swiss cheese, like less-fancy nachos.

It was spice-ay.  And delicious.

Dinner

After merking my Microbiology final, I was ready for dinner!

I placed two chicken quarters, which were a Publix Ready-to-Go meal, in the oven to roast for an hour.

I served the chicken alongside steamed spinach and yellow squash.

I used frozen yellow squash, which I will never do again.  It was a weird texture and tasted horrible.

In less than 12 hours, I will be done with finals!  Then, it’s onto the next task…packing up the whole apartment to get ready for our move this weekend!

Saved By The Pizza

Today has been a busy day!

I woke up bright and early and headed to the gym for a spin class.  I guess going with my mom this passed weekend re-sparked my love for spinning!  I was happy to be back at my old gym and sweating like crazy through a 45-minute class.

After the gym, I made a small yogurt bowl:

I topped 1/2 cup of Chobani 0% Vanilla Greek Yogurt with 1/2 cup sliced strawberries, Splenda, and a sprinkling of Pumpkin Pie Spice.  How cute are my new star bowls?  They were another gift from my mom that came home with me from Ft. Lauderdale this weekend!

After a loooong chemistry lab, I came home and made a healthy lunch, thanks to last night’s curry leftovers:

Leftover Goodness

Delish!

I topped a bed of broccoli slaw with leftover roasted brussel sprouts and squash, and then topped that with some of the leftover shredded chicken from the slow cooker. I added a drizzle of Kraft Toasted Sesame Dressing, and lunch was ready!

After lunch, I relaxed for a little bit before heading out the door for yet another even looonger class!

My professor decided to lecture as late as possible, so I didn’t get home until around 9:45.  I was definitely not in the mood to cook, so I was happy to open the freezer and find a frozen Publix Organic Vegetable Pizza that I forgot about:

Although this pizza was much smaller than I anticipated, Corey and I were able to get two pretty good-sized slices each.

After catching up on some TiVo, I got hungry all over again and went hunting for an after-dinner treat.  I realized that our kitchen is almost naked again, and we definitely need to go to the grocery store tomorrow!  I was able to throw this little dessert together:

Dessert

I toasted half of an English muffin, spread it with 1/2 tablespoon of natural peanut butter, and then I melted 10 semi-sweet chocolate chips in a dish and spread that on top of the peanut butter.  I served my little chocolate-y delight with a glass of almond milk.

Yum!

Can’t beat chocolate and peanut butter together.

I’m officially exhausted.  Have a great night!

Loser, Loser Chicken Dinner?

After my afternoon class, I came home for a short break and made some lunch.  Once again, I ended up compiling a random assortment of things.  I added a few slices of chopped Golden Delicious apple to a bowl of broccoli slaw and topped it with 1 1/2 tablespoons of Makoto Ginger Dressing.

The apple added sweetness to the salad that went well with the dressing.  I also had a handful of almonds paired with a wedge of Laughing Cow Light Garlic and Herb Cheese:

"Have you laughed today?"

I would like to point out that those commercials really bother me.  No, lady, I’m not laughing just because I’m eating a wedge of cheese.  Moving on…

I feel bad that Corey has been getting left with the task of making dinner during the week because I don’t get home until so late.  Since I had some down time, I decided to be helpful and cook part of our dinner ahead of time, and then stick it in the fridge for later.  I grilled up two Publix Ready-to-Cook chicken breasts we bought this week.

I forgot that everytime I use the grill pan, someone gets verrrry upset…

Dinner

When I got home from class, I decided to make the rest of our dinner as simple as possible.  This meant using up my favorite go-to items in the freezer.  I microwaved two sides along with my pre-cooked chicken, and dinner was ready in 8 minutes flat.

I love frozen veggies.  Especially the ones that come in some sort of sauce but are still low calorie!  I also had a small glass of Chardonnay.  Too small.

Unfortunately, as soon as I took one bite of the chicken, I suddenly remembered why I vowed to never buy that particular Ready-to-Cook item again!  It’s like putting a cube of salt in your mouth!  The ingredients claim that they are lemon and garlic marinated, but all I tasted was salt.  Naturally, I still ate every bite, but it wasn’t very good.  And now my sweet tooth is kicked into high gear!

I’m off to go finish watching Glee that I have recorded, and then I need to get started on studying for my first Microbiology lab practical tomorrow.  Scary!
