And the caloriefest continues!
I guess this is just how it goes when you’re on “vacation”, even if you’re not that far away from home. But, that’s OK! At least I’ve done a good job of starting out the day on a healthy note:
This morning I woke up and made myself an Egg Beaters omelet, with green pepper, tomato, onion and a little cheese, topped with salsa:
I haven’t had an omelet in a long time, and this reminded me how much I love them when they are packed with veggies!
After breakfast, I did some packing and cleaning up, and before I knew it, it was time for all of us to hit the road! Sadly, we were all going in different directions. My parents packed up their car and headed towards the Keys for their own grown-up Spring Break, while my sister was headed back to Tallahassee for school. There was just one stop my sister and I had to make before we could leave Ft. Lauderdale…
This place is one of those places that you write about to Diners, Drive-Ins and Dives and beg them to come see it. It is so unique and so amazingly good. It’s really just a small sub shop near the beach, but it’s so much more than that. Their subs are perfection. They have amazing bread, high quality meat and cheese, and they top it with these special sweet peppers that make the sandwich melt in your mouth. You can’t go to Ft. Lauderdale without going there!
I ordered a large roast beef and provolone sandwich with lettuce, tomato, and sweet peppers to bring home for Corey and I to share:
This picture does not do it justice. The people that work there slice the meat extremely thin using a machine, and then that guy will throw it through the air and the guy at the end of the assembly line catches it from the air using the bread. I love when my food is delicious AND entertaining! After they put down a layer of the thin meat and cheese, they add the toppings and then they tuck it all in like a little bed using another layer of thin meat on top! Basically, what I’m trying to say is that you should get in the car and drive to Ft. Lauderdale to get this sandwich right now.
After my sister and I got our sandwiches, she looked at me and said, “Caloriefest ends today, ab sesh starts tomorrow”. Amen, sista.
Speaking of driving, that’s basically what I did for the rest of my day. It actually went by pretty fast, probably thanks to the amazing collection of 5-year-old mix CDs that I have in my car. Thank you to Danity Kane for captivating me with your unmatched girl-band musicality. (When I put that link in I was shocked to see that they still have a working website…)
When I got home , Corey helped me unload all the bags of goodies that my parents sent home with me. It’s always great to visit home and get showered with pantry and kitchen-related gifts! This time I scored extra-exciting things such as new red kitchen towels, a red mini-strainer filled with artificial apples (yes, that excites me), and a bottle of Chardonnay Lemon Basil marinade! I also brought home a cupcake cookbook that tells you how to create professional cupcakes like you would see on Cupcake Wars or something. Someday, I will get around to trying out a recipe or two!
After a power nap, we headed over to Corey’s parents house for dinner. His grandparents were there to visit, so Corey’s mom made a special dinner featuring a recipe she recently got from one of her friends for Penne alla Vodka.
The recipe is kind of unique, because one of the steps is marinating red pepper flakes in vodka overnight! Then, you strain out the flakes and you’re left with vodka with a kick to add to your sauce.
She served our pasta with a Caesar salad:
For dessert, she served a homemade apple pie with vanilla ice cream (hello, weakness). I ate it so fast that a picture was not an option. I can assure you it was fabulous!
On our drive home, we spotted this strange scene taking place:
I don’t know if you can tell from the picture, but we saw this little rabbit sitting so still, and then there was another rabbit a few feet from him, also frozen, and then there were two cats sitting side by side staring at them from behind a small hill! We stopped and watched what was happening for a few minutes because it was so weird, and we concluded that there were baby bunnies nearby and the two rabbits were trying to protect them from the evil cats! Luckily, we scared the evil cats away and saved the day for the bunny family. All in a day’s work.
Now, we are stuffed and plan to lay around for the rest of the night. Real Housewives of OC is on tonight! Woop Woop!
I have to admit, I’m looking forward to getting back to my normal weekday routine. Gym, healthy food and studying- HERE I COME!
