Under Construction

Exciting news!

Cooking With Carly is currently under construction– I am moving over to my own domain name and revamping the whole site to make it more user-friendly- and cuter, of course!

It should be ready to go in a few days, so I will be sure to announce it!

Out of Space!

Just wanted to pop in and let everyone know that I’m still alive- my blog is simply out of space! ¬†Working on fixing it this week, and then I’ll be back! ¬†Hang tight for some great recipes coming up ūüôā

Moving Day

If there is one thing in this world that I have become an expert at, it’s moving.

In the last 5 years, I have moved a total of seven times. ¬†The result? I have basically no earthly possessions left. ¬†There’s always a certain point in packing where I just start throwing anything and everything into a trash bag.

The biggest purge I ever went through was at the end of my junior year, when I moved out of my friend Katie’s house and into a house with Corey and two other roommates. ¬†I had a small breakdown as I tossed all of my most girly and adorable things into the trash. ¬†There’s no place for pink and sequins in a room that a boy sleeps in.

To give you a better idea of my personal style, here are some pictures of my room when I lived in my sorority house:

Alas, I had to grow up.  Out with the pink, in with the grown-up neutral tones.

Our new place isn’t picture-ready yet, but here’s a look at our old apartment, to hold ya over:


We spent about 6 hours on Saturday packing boxes, carrying them down the stairs, loading up the car, unpacking the car at the new place, and driving back to the old place…aren’t you jealous?

At some point, I felt like no matter how much I put in the car, I wasn’t even making a dent.

I ate a slice of leftover artichoke and mushroom pizza (a post-finals treat from Corey) to power me through the packing of the kitchen:


When I got to the bathroom, I came across some finds that are worth mentioning…my collection of “magic” diet pills.

Sadly, this isn’t even a quarter of all the diet pills, books, kits, shakes, etc., that I’ve tried throughout my life. ¬†For the first time, in all seven of my moves, guess where all these bottles of LIES went?


That’s right. ¬†Into the trash. ¬†Hooray for never having to be on a diet ever again! ¬†I ‚̧ healthy living.

Eventually, everything was into the new place, and we were so relieved. ¬†We showered and Corey’s parents took us to dinner at Outback. ¬†I ordered the Outback Special- 6 oz filet with crab cakes, that turned out to be the size of quarters, but were still delicious, and french green beans.

We were exhausted at the end of the day, but we are very happy in our new home.

NFL Draft Party

Contrary to popular belief, I did not actually fall off the face of the earth after Wednesday’s post.

However, I haven’t stopped moving since then, and I am cherishing this long-awaited time on the couch. ¬†I have lots to catch you up on, but this post is dedicated to Friday night- also known as the coolest night ever.

As you may already know from my About Me page, Corey played football for the University of Central Florida, where we both went to college.  He was a 4-year starter, played tight end, and had an amazing career.  Unfortunately, he suffered not one, but two, season-ending injuries; his junior year was a broken ankle, and his senior year was the most devastating- a torn ACL.  He played too many plays to be eligible for a medical red shirt, and his football career was ended very prematurely.

When I first got to UCF as a freshman, my roommate and best friend, Katie, had already been living there over the summer.  Being the social butterfly that she is, she was proud to announce that she had already befriended all of the football players on our dormatory hallway.

I will never forget the first night when I arrived at school, and the first thing Katie said to me was, “Don’t worry, there’s this guy named Jah that lives on our hallway- he’s basically the biggest human I’ve ever seen, and if we’re really nice to him, he might take out our trash for us!” ¬†Little did I know our friendship with Jah would lead me to my future husband ūüôā .

Corey lived with Jah for 3 years in the dorms, along with another teammate, Mike. The three of them have been great friends ever since.

Jah has had a great football career at UCF, but his time on the football field is only just beginning.

On Friday night, Corey’s parents hosted an NFL Draft watch party for Jah, who was expected to be drafted in the 2nd or 3rd round. ¬†We invited a bunch of our friends over, and had a great time eating, drinking and anxiously awaiting the golden phone call.

Corey assumed his favorite role- Grill Master:

His mom rounded out the grilled burgers and hot dogs with french fries, salad, and an assortment of desserts.

I filled my plate with an extra-burnt hot dog, just the way I like it, and some french fries.

And an Orange Blossom Pilsner, of course.

The 2nd round of the draft had ended, and that’s when everyone’s nerves kicked in. ¬†Next thing we knew, Jah bolted out of the room and into the office to answer his phone. ¬†THIS WAS IT!

At the same time Jah was on the phone, everyone else was in the living room and erupted in celebration when this popped up on the TV screen:


As soon as he came back into the room, the celebrating began.  Jah did the honors of popping champagne:

Mike gave a short and sweet toast, telling Jah how proud we all are of him.

Then, it was time to par-tay.

We moved the celebration down by UCF to Knight Library.  We drank and danced the night away and had a great time.

Corey and I both agreed that this was one of the most memorable experiences we’ve had, and it is certainly something we will never forget. ¬†We are so happy for Jah- if there is anyone who deserves something this great, it is definitely him. ¬†We can’t wait to cheer him on as newfound Ravens fans!

Winter Park Art Festival

What a great day!

The Florida heat has finally returned, and although I am positive that I’ll be sick of it by Monday, I’m not complaining about it today!

The morning did not start out on the productive note I was hoping for…I really wanted to make it to spin class this morning, but I was so tired when I woke up, I just couldn’t do it! ¬†Ugh. I’m a failure! ¬†My bed and all of it’s comfy-ness, mixed with the fact that I closed all the blinds in the apartment to make it feel like a dungeon, did not allow for very good odds that I would be getting out of bed before 10AM today.

Once I finally emerged from my cave, I made a delicious breakfast.


Isn’t that just a beautiful sight? ¬†I toasted a Thomas’ Whole Wheat Bagel Thin, spread 1/2 tablespoon Skippy Natural Peanut Butter on top, and sliced a small banana on top of that. ¬†I sprinkled it with cinnamon, and served some sliced strawberries on the side. ¬†A perfect Saturday morning breakfast!


Corey and I eventually got our lazy butts to the gym, although, I definitely did not get in the sweat sesh I was originally planning on from spin class. ¬†Instead, I hopped on an elliptical and got lost in a mentally-titillating episode of Real Housewives of Miami. ¬†I love when exercise equipment has TV’s…it makes my workout fly by! ¬†Before I knew it, 45 minutes had passed and I was nice and sweaty. ¬†I contemplated a weights session, but Corey was ready to go, plus, we had plans for the rest of the day that I was excited to get to.

After our workout, we lounged by the pool for an hour or so, and I began reading a book I nabbed from my parents’ house: A Million Little Pieces by James Frey.

It’s a book about this guy’s addiction and struggles during rehab. ¬†Not my usual girly love novel, but I like it, nonetheless!

We headed inside and showered, and then drove down to Park Avenue for the Winter Park Art Festival! ¬†We go to the festival every year. ¬†Most people probably go to look at the art. ¬†I’m there for the food. ¬†What else is new?


By the time we actually found a parking spot and got to the festival, it was already 3 o’clock, and I was famished! ¬†I think we were delusional with hunger, because instead of being smart and eating “festival food” for lunch, we high-tailed it right into 310 Park South, one of our favorite restaurants, to grab something to eat.

We knew we were going to be eating all day, so we decided to split a meal. ¬†310 is the home of my all-time favorite salad- the Seafood Salad- made with citrus-marinated shrimp, scallops and calamari. ¬†That’s what I really wanted to order, but it’s definitely not enough to share, so, somehow, we ended up with this bad boy in front of us:


This was Corey’s fault, I swear! ¬†We split a bleu cheeseburger and french fries, and I loved every greasy bite.

However, festivals cause my inner fat girl to kick into overdrive, so I still had one thing on my mind after lunch:



I love you.

Arepas are cornmeal patties with mozzarella cheese in the middle, fried on a big griddle to melty perfection.  The combo of sweet corn with salty cheese is out of this world.  Again, I loved every greasy bite.

Corey betrayed me and stopped for samples at an Oceanspray Cranberry Juice tent.  SICK!

After lots of walking around and perusing the different interesting art tents, we got a little thirsty!  Using Foursquare, we saw that one of our favorite bars, called Circa, had a special for your first check-in:

Unfortunately, the waiter told us this special wasn’t valid during the festival. ¬†Guess we’ll just have to come back to use it! ¬†We ordered glasses of Chardonnay, anyways:

While sipping away, I discovered that Corey and I are total opposites when it comes to celebrities. ¬†I am a celebrity freak. ¬†I love to read about them, I love to pretend I know them, I love to be in the same vicinity as them…Corey, however, says that “they’re just people”, and gets zero excitement out of seeing them. ¬†As we were sitting there, Corey nonchalantly says, “Oh, there’s¬†Carrot Top.” What?! I turned my head just in time to see the Botox-ed comedian himself, walking right passed us.

I contemplated running after him for a picture, but I knew Corey would make me walk home if I did.

We had a second celebrity-sighting while looking at some art. ¬†Again, nonchalantly, Corey said to me “Ryan Anderson is right next to you.”

This time, I didn’t even contemplate asking for a picture, because Corey would certainly shoot me on the spot for embarrassing him in front of an Orlando Magic player.

After some more walking and browsing, I spotted a new addition to the usual Park Avenue shops that I’ve become so accustomed to…Kilwin’s Ice Cream!

I had to stop in.

Then, I had to get at least a small cone of deliciousness!  Corey and I shared a small scoop of French Silk ice cream in a cake cone.

Calm down, Carly.

I feel like this picture truly embodies the fat girl rampage I experienced today. ¬†When we were in line, I said to Corey that my inner fat girl was coming out because I wanted to eat everything in the whole freaking store, and he simply looked at me and said, “Inner?”


After the festival, we headed home to relax. ¬†After a short nap, it was time for dinner! ¬†We wanted to go somewhere that we could watch the basketball games, so we ended up at Smokey Bone’s.

On a side note, how sad would you be if your dog hugged you like this everytime she thinks you’re leaving her?

Anyways, the rampage continues!

Thank you to our friend, Buxton, for the fact that we can now never go to Smokey Bone’s without ordering the Chicken Chili Nachos for an appetizer. ¬†They’re the only nachos that I can’t resist eating.


I was pretty full after our appetizer was finished, as should be expected after eating your body weight in chips and chili.

For my main meal, I ordered the BBQ Pulled Pork Cuban, with steamed broccoli as my side.

I made it through all the broccoli and 3/4’s of one half of the sandwich, and then I was dunzo. ¬†The remaining 1/4 went into Corey’s mouth, and the other half went into a box and home with us. ¬†It will more-than-likely be joining it’s 1/4-sized cousin in Corey’s stomach tomorrow.

On our way home, we made an emergency stop at CVS.  I ran out of my all-time favorite face wash/make-up remover that is undoubtedly handcrafted by angels:

Neutrogena Make-Up Remover Cleansing Towelettes. OK, so it’s not really face wash at all, but for someone who hates washing their face at night, these are awesome! ¬†A few swipes and all of your make-up, even tons of mascara, is completely cleaned from your face:

We’re gonna see if we can find a good movie to watch, then it’s off to bed! ¬†Have a great night!

Kid Rockin’ the Night Away…

Last night was so much fun! ¬†We had a great time at the concert, but I’ll get to that later. ¬†Let’s start with breakfast!


Can you tell I’m a creature of habit by now? ¬†I tend to eat pretty much the same thing for breakfast for a week straight…

Hi, again!

Quaker Weight Control Oatmeal in Maple & Brown Sugar flavor, topped with a small banana and sliced strawberries.

I am now out of both bananas and strawberries, so I guess this is the last time you have to look at this breakfast (at least for this week!)

After breakfast, we lounged around the house for most of the day.  Around lunchtime, an intense craving for Chick-fil-a came upon us, so we headed out to grab some food and do a little shopping!


I don’t know what my problem was yesterday, but I kept forgetting to snap pictures of my food! ¬†Here is what my lunch looked like:

Eet mour chiken!

I had a grilled chicken sandwich on a wheat bun. ¬†I also had some waffle fries, because you can’t go to Chick-fil-a and not have waffle fries. ¬†If you’ve never had it before, Chick-fil-a has “Chick-fil-a Sauce”, which is basically their version of honey mustard. ¬†It. is. amazing. ¬†I could probably take a bath in it and not feel weird about it at all. ¬†However, I came to the unfortunate discovery of the calorie content of one little packet….140 calories! ¬†I can easily go through 2 or 3 packets, so this is a habit that will be coming to an abrupt end! ¬†Well, at least, I’ll try...

After we ate, we did some browsing around at Marshall’s and Old Navy. ¬†By the time we got back, it was time to start getting ready to leave for the Kid Rock concert that Corey won tickets to on the radio! ¬†First, we decided to meet our friends, Rocky and Katie at Knight Library for drinks before the concert.


Before we went into Library, we noticed a new place next door called “World Famous Burgers and Beer“. ¬†We decided to stop in and grab a burger. ¬†Again, I forgot to take a picture of our dinner, but that’s mainly because we were so hungry that it disappeared in minutes! ¬†This particular place is kind of like a Subway for burgers, where you get to build your own. ¬†We ordered an Angus burger on a wheat bun with cheddar cheese, lettuce, tomato, pickles and mushrooms, and a side of fries. ¬†We split the meal down the middle, and it was really good!

Even though Corey won tickets on the radio, Rocky and Katie had box seats, and we ended up sitting with them in the box for the concert.  We had so much fun!

One thing I know is that I absolutely love concerts. ¬†It doesn’t matter who’s it is! ¬†I wouldn’t consider myself a hardcore Kid Rock fan, but there’s just something so exciting and fun about going to a concert and listening to great music.

I’ll never forget my first concert. ¬†I was around 10 or 11, and my neighbor and best friend was going to the NSYNC concert and invited me to go with her at the last minute. ¬†I was in heaven! ¬†Oh, and I can’t forget the life-changing moment where I got to meet Hanson backstage at a concert. ¬†If I recall correctly, I was wearing black velour OVERALLS over a size XXL Hanson shirt, with a safety pin holding up one side of the overalls. ¬†Not to mention I was a fat kid. ¬†I would pay good money to see that picture.

Lazy Fat Girl Sunday

I’m all for lazy Sundays. ¬†Unfortunately, today has been re-named “Lazy Fat Girl Sunday” because that is exactly what I turned into in 3 short days!

Remember how I said I think it’s OK to loosen the reigns on healthy eating during the weekend?

What I should have said is that sometimes I throw the reigns on the ground and let the horse run away!

I have eaten terribly this weekend, AND I didn’t work out at all! ¬†This is not happening again. ¬†Starting next weekend, I am going to be much smarter about my weekend eating decisions, and I will certainly not be missing 3 workout opportunities! ¬†One day off is fine, but not three. ¬†I always let this happen, and then all of the hard work I did during the week was for nothing because I gain weight back like it’s my job. ¬†I wish it was my job. Well, as they say, sometimes you just have to get back on the horse! ¬†Are you enjoying all of my equestrian references so far?


OK, I know I already said this today, but I’m seriously done with the egg sandwich for a while. ¬†Obviously, eating the same thing multiple times during a week can make anyone get sick of a certain thing, but then I doubly grossed myself out by chomping into a part of the eggshell that got in there by accident. ¬†Gross!

Baby bye, bye, bye!

Jah stayed with us last night, and we all spent the day lounging around watching T.V.  I did some cleaning and laundry while he and Corey played video games.  Typical.

We decided to go to the movies and see “Hall Pass” because Corey said it had good reviews. ¬†We were starving, but since we were already running late, we didn’t have time to go eat lunch. ¬†Corey grabbed 2 foot-long tuna subs from Subway, stuffed them in my purse, and I brought them into the movie. ¬†Such a rebel.


I was supposed to give the other half of mine to Jah, but, um…I ate it. ¬†I was starving!

The movie was terrible, in my opinion. ¬†A dumb story line mixed with random situations. ¬†I was not a fan of the premise of the movie to begin with because I think it’s utterly ridiculous how this country has destroyed the ideals of marriage and the media sends such a negative message regarding something that isn’t miserable in the least when two people are truly in love and are willing to put forth the necessary effort…..PHEW! ¬†But that’s for another time.

After the movie, we came home and did some more lounging around.  Our friend Buxton came over and brought his new puppy over to play with Bella!

Her name is Sookie and she’s a Great Dane mixed with an Akita. ¬†We saw her last week, and she’s already grown to Bella’s size since then! ¬†She’s so cute.

Jah and Buxton left a little later, and Corey suggested that we order a pizza.  I almost devoured my first slice before I got a picture:

I really prefer veggie toppings to meat toppings on my pizza, so I was pretty bummed that the mushrooms were so puny! ¬†It was still delish. ¬†And now, I’m stuffed and feel gross, thanks to this wonderful Fat Girl weekend. ¬†I’m off to sit in front of the Oscars and live vicariously through Mila Kunis and all her perfection. ¬†Back to veggies and the gym tomorrow!

The New and Improved “Cooking With Carly”

When I first began the adventure of starting my blog, I set out to have the focus be completely on the recipes I create. ¬†I wanted to teach people how easy it is to make healthy meals every night. ¬†After I started my blog, I started coming across other people’s blogs and began reading them daily. ¬†I have to say, it’s quite an addiction! ¬†There is just something so intriguing and inspiring about reading the blogs that people update daily with their workouts, recipes, and just simple recollections of their daily routine. ¬†Maybe this sounds weird to some people, but I think that anyone who has a big interest in health and fitness and needs that little extra motivation to keep them on the right track would LOVE reading a health and fitness blog!

Therefore, I have decided to turn “Cooking With Carly” into a health and fitness blog. ¬†I will still keep a large focus on my healthy recipes, because that is my passion and the part of this blog that I think is the most important. ¬†However, I am going to be updating daily, including pictures and posts about each meal decision I make, whether I create it myself or not, and I will also be updating my new page, entitled “Workout Log” with my daily exercise routines. ¬†I think this will serve as a great motivator not just for my readers, but for myself!

I am excited about this new challenge, and I hope you all enjoy reading my daily life! (Hopefully, I’m not too boring!)

Breaking Out of the Workout Rut

For the last year, Corey and I have made it a big priority to get our butts to the gym every morning. ¬†We both got gym memberships last year, and we somehow managed to wake up at least 5 days a week at 6am to go work out! ¬†After we moved to our new apartment, we both landed full-time jobs and easily fell into a great routine of hitting the gym together at 7:30am, showering at home and then going our separate ways for the work day. ¬†However, after I was laid off and Corey switched to a part-time job, we decided to cancel our gym memberships and utilize the smaller gym that our apartment complex has to offer. ¬†We have been doing this since October, and while it has worked out well for us, we’ve been getting into a workout rut lately. ¬†For some reason, it has become impossible to wake up before 8:00am and walk 10 steps to the gym! ¬†How ridiculous, right? ¬†Well, we decided last night that we are lazy bums no more! ¬†We mustered up some new motivation, and got to the gym this morning for what we like to refer to as a “crush sesh”.

The one thing I absolutely adore about my apartment complex is that there is a big, expensive, high-quality coffee machine in the lobby, offering free coffee to residents. So, I begin every morning with these two best buds:

After my workout, I munched on a Golden Delicious apple and a wedge of Laughing Cow French Onion Cheese.

After my post-workout snack, I tackled the daunting task of studying for my Microbiology exam, which I have to take tonight.  It was just me and this guy for several boring hours today:

It was a gorgeous day outside, so I started to feel the call of the sun and fabulous pool that our complex has. ¬†Around 2PM, I finally gave in. ¬†I headed outside with my study guide and flashcards like an uber-nerd and layed in the sun for an hour or so. ¬†The pool has been really crowded the last couple of days due to the finally-Floridian weather we’ve been having. ¬†Because of this fact, also because I am not a tool, I opted to not be the girl at the pool taking pictures of herself. ¬†I found this old poolside photo of me laying around, so it will have to do:

Anyways, after my hard day of work I came inside for an extremely random lunch.

After I put my lunch together, I kind of realized why I have never documented my breakfasts and lunches in the past. Because they’re WEIRD.

I inspected the fridge and came to the realization that we pretty much had nothing good to eat. ¬†I heated up a bowl of leftover Whole Grain Hamburger Helper, to which I previously added some frozen broccoli and ground turkey. ¬†The portion I heated was really just all the broccoli and a few bites of noodles and turkey. ¬†I then added a healthy serving of broccoli slaw, and topped it off with 1 1/2 tablespoons of my favorite dressing- Makoto’s Ginger Dressing.

It was strangely…delicious.

What’s the weirdest thing you’ve ever made for lunch?

Officially Camera-Challenged

Apparently, I have a problem with hanging onto my belongings while under the influence.

The good news is, we all had a great time at Gasparilla two weekends ago in Tampa, FL.



The bad news is, my camera didn’t make it out alive.

I held onto some hope this week that it might be found, but it looks like it’s a gonner. ¬†My birthday is this weekend, so there’s still a small glimmer of hope that the Birthday Fairy will hear my wish! ¬†If not, I will once again be taking a small hiatus from blogging. ¬†Fingers crossed!

“I’ll Have The BIG SALAD.”

Tomorrow is the day! ¬†I’m going to buy a camera tomorrow and I am extra excited about it. ¬†Corey let me use his iPhone again for one last crappy picture (no offense to you Appleheads) of our dinner.

I intended to make tonight’s dinner another one of my simple, low calorie meals like this one. ¬†When it came out of the oven, Corey saw me chopping up lettuce and asked if he could just have a “really BIG salad!”

If any of you watch Seinfeld as much as we do, you’re probably laughing. ¬†I couldn’t help but think of this episode where Elaine orders The Big Salad and George freaks out about how he paid for it. ¬†“If it was a regular salad, I wouldn’t have cared, but you had to have the BIGGGG SALAD!!” Gets me every time.

Anyways, back to dinner. ¬†So, per Corey’s request, I ended up chopping up Romaine lettuce, tomatoes, and BBQ chicken breast, and tossing it all together with a homemade BBQ Ranch dressing. ¬†It was great! ¬†Call me crazy, but I even topped mine with roasted broccoli that I had in the oven.

There are two rules that I have when it comes to my salads:

1. Everything must be chopped and tossed until I have a perfectly combined chopped salad in front of me.

2.  It has to have a lot of different textures and treats in it, enter, roasted broccoli.  This one followed my rules and was simple to throw together.

BBQ Chicken Salad

Servings: 1


2 cups Romaine lettuce, chopped

1 tomato, seeded and diced

1 BBQ chicken breast, chopped

BBQ Ranch Dressing:

Servings: 1-2


2 tablespoons Light Ranch dressing

2 tablespoons of your favorite BBQ Sauce


Toss everything in a big bowl with the dressing and serve up your BIG SALAD!
