Healthy Recipes to Keep You Fit and Fabulous

It’s finally here!  S-P-R-I-N-G B-R-E-A-K!

To be honest, I have no idea why I’m so excited about it.  It’s not like I have some amazing vacation planned, like I would have when I was a “real” college student.  But, I’m still overjoyed to have a week off from driving to a million different campuses and getting home late.  Oh, and the actual classes, too. 🙂


This morning’s breakfast was reminiscent of my dessert yogurt bowl from last night.

Coffee + Yog

Yogurt Bowl

  • 1 cup Chobani 0% Vanilla Greek Yogurt
  • 1 small banana
  • strawberry slices
  • 1/2 tablespoon Skippy Natural Peanut Butter
  • Cinnamon!

I loved the addition of cinnamon on top- it really brought everything together!

I spent the morning studying for my last exam before SB.  I decided to forgo my morning workout in favor of studying, but around noon, I started to get the itch to go running!  It’s a rare occasion when I actually have a desire to go outside and run, so when the feeling strikes, I’m always sure to quickly take advantage of it before it disappears!  I threw on my workout clothes and headed outside for a 2.5 mile run.

Everything was going great-  it was a gorgeous day outside, I had new jams on my iPod, I was in a great running rhythm, I was in the zone, and then….BAM:


I stopped, stared at the sign as if I could move it with my eyes, and tried to figure out where the heck I was supposed to go!  For those who know me, I am what Corey and my father would refer to as “directionally challenged”.  It’s amazing that I know how to get to my own house half the time.  So, the fact that my usual running route was disrupted sent me into a panic!  The sign pointed me down another path.  I started heading that way, and then turned around halfway down it after realizing it was a dead end.  After some more intense staring at the sign, I finally realized that I could run around the construction site to get to my usual path.

Crisis averted.


After my run, I layed by the pool with Corey and he helped quiz me for my test.  I was starving by the time we got back, so last night’s Sesame Noodles sounded perfect for lunch!

I also snacked on some red bell pepper slices with tuna salad:

I got kind of snack-happy after lunch, and ended up having an apple with peanut butter, and several more fork-fulls of noodles!


When I got home from class, I wanted to make something simple for dinner.  I decided to go with two Publix Ready-to-Cook cajun-seasoned chicken breasts.  This particular chicken must have been the Kim Kardashian of chickens, because the chicken breasts were ENORMOUS!  For some reason, thick chicken really grosses me out, so I got to work on pounding them a little thinner before cooking.

I threw them in a skillet with some non-stick spray and cooked on each side for about 5 minutes.

For a side dish, I seasoned some chopped cauliflower, broccoli and one white onion with garlic powder and curry powder, and popped it in the oven to roast for 25 minutes on 425 degrees.

Simple, healthy and delicious- just how I like it.

However, I think all my snacking earlier kind of ruined my appetite for dinner.  I had one thing on my mind while I ate my chicken…

I’d just rather have dessert.

I convinced Corey to head to the frozen yogurt place, and off we went!

I think I was a little too excited, because I ended up with about a gallon of fro-yo and toppings in my cup.  It was kind of embarrassing.

  • Butterfinger pieces
  • Golden Grahams
  • Brownie pieces
  • Cheesecake pieces
  • Chocolate sprinkles

I really had every intention of eating half and saving the other half in the freezer…but…that didn’t happen!

And now…I am really full.  But happy!
