If you’re looking for a quick and easy chicken recipe, you’ve come to the right place.  I’m not the biggest fan of chicken, so I made an easy pineapple salsa to spice it up a bit.

Grilled Chicken with Pineapple and Onion Salsa

Servings: 4


4 boneless, skinless chicken cutlets

8 oz. pineapple cubes, diced

1 medium onion, diced

2 tablespoons fresh cilantro, chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt and pepper

1 tablespoon lime juice


Season the chicken with salt, pepper and garlic powder.  Grill or bake until cooked through.  For the salsa, combine the pineapple, onion, cilantro, lime juice, salt, pepper, and garlic powder.  Mix together and refrigerate for 30 minutes.  Serve chicken topped with the salsa. Note:  I served this dish with plantains, but they didn’t turn out very well! I recommend serving it with your favorite potato recipe.
